We took our sheep to this company for processing. We told them we wanted the meat to hang for 5 days before cutting. They called us the day after we took it to them t tell us it was ready. We said it can't be, that is not the agreement, it was supposed to hang for 5 days. Their response was, "Oh Well."
This meat is now ruined and inedible. The animal has been wasted.

It is unfortunate to learn that one of our customers has submitted a complaint. The customer brought a sheep to our facility on the morning of July 27, 2020 to be butchered. We processed this sheep the next day on July 28, 2020. The customer was called later that day on July 28, 2020 to notify them the meat was ready to be picked up any time after that day so it had time to freeze. A sheep does not require the meat to be hung and is able to be processed after the meat has chilled for at least 24 hours. There was no agreement with the customer on hanging this sheep for 5 days as stated in the complaint. The meat is in no way ruined and is perfectly safe to eat. No one with our company has stated otherwise and no one has spoke to this customer after the phone call on July 28, 2020. As of this date, August 10, 2020, the customer has not picked up their meat. Due to high demand at this time we are not aging any meat. We apologize if the time frame on processing was assumed and not clearly communicated by either party. If such request was made by a customer we would have informed them that it cannot be done at this time. As a resolution we would like the customer to pick up and pay for their purchase, and dismiss the complaint made against us.

I am rejecting this response because: the business is lying. The lady who always answers the phone assured me that our sheep would be aged 5-7 days. I had requested 10 to 14 days, but she told me that was not going to be possible. I explained to her how very important it was to us that the sheep be aged at least the 5-7, and we agreed on that time frame. I explained to her that we’d had a sheep processed before that had only been aged a few days, and it was inedible. She assured me that it would be aged 5-7 days.When my husband dropped the live sheep off, the man who helped unload asked him what kind of cuts he’d like. My husband responded that the sheep was going to age for a week, so we would discuss the cuts and call them in a few days with our order.So two people knew the importance of aging the meat. Also, we were never able to call with the cuts we wanted , because they did whatever they did within 24 hours. Please help,

As previously stated, there was no verbal agreement made to age the meat from this sheep. I am including a copy of the original invoice for reference. The cutting instructions as stated on the invoice were given by the husband when he delivered the sheep. The cutting instructions were written by the person who assisted the husband in unloading the sheep. As shown on the invoice, there is nothing stated for how many days to hang. We would never cut anyone's meat without having the customer's instructions. According to the Food and Agriculture Organization of the United Nations (literature attached for reference), a sheep carcass only has to be hung for 24 to 30 hours to fully cool the meat. This sheep was chilled for over 24 hours before being processed. After processing, the meat is then fully frozen to preserve it before the customer can pick it up. Due to the continued high demand of our business, freezer space is limited and we are calling customers to pick up their meat as soon as the processing & freezing is complete. This customer's meat remains preserved in our freezer at this time and is still perfectly safe for consumption. To resolve this matter, the customer may pick up their meat at no charge.
