My name is Gregory M Cody, Owner and Executive Chef of Brimont Bistro/ Brimont Catering CorpMy history in culinary arts is vast ranging from US Navy to New England Culinary Institute, to River Cafe NYC, to banquet chef at Tribeca Grill NYC, to saucier at Montrachet NYC, and then to Rochester where I have been running my operation here for yearsThis couples complaints regarding the event on September at the [redacted] Estate Bed and Breakfast I completely disagree withThe couple had issues with the price of the event from the beginning with nervous visits to Brimont Bistro to alter and change the menu to get within a budgetThe final cost agreed was $per person including tax and tipThis is very reasonable for an offsite catering event with myself and server on a Sunday afternoonMenu is as follows: Assorted cheeses crackers Fruit trays Seasonal greens salad with roasted onion balsamic Penne vodka pasta Rosemary roasted potatoes Haricot vert beans with cherry tomatoes Brocolli and cheddar quiches Pork tenderloin with cranberry chutney Rolls butter Server Chef Wash dishes and cut cakeAs for lack of organization, this lack is truly on their partThe bride was extremely worried days prior visiting the Brimont Bistro on that Saturday expressing concernsMy conversation over the phone on that Monday 21st ? with the bride was showing signs of frustration with this event in areas that are out of my controlI always contact all catering event contacts for a week on that Monday prior to their event, to go over all aspects of the event to be sure nothing is missed and we are on the same pageThis is not an action taken by an unorganized person!! The menu item was missed on their end as I went over the menu that Monday and nothing was said about that item, plus they were not charged for itPresentation of food has never been an issue, compliments are what we get, not complaints, and we work hard to see that is the caseAlso stated in the letter was not having enough food, in defense of this the couple took large Tupperware containers of each item home with them after the eventMy arriving late to the event, also stated, I told the couple, " I show up as early as I have to in order to get the job done, even if it's 8:30"All food is prepped 1/way at Brimont Bistro and finished at the siteThe B+B has a breakfast that they do for their guests as such I like to stay out of their way till that is doneThis couples ceremony was at noon with a serving time of 1:30, and the ceremony ran min late due to the BrideThe room was set up by noon by B+B staff and my serverWe also cut their cake for no charge, something I don't mind doing, most caterers wont if it's not their cakeThis is a charge of $1.50-$per person avoided I Gregory Cody have been running this business for years in [redacted] NYEveryone knows if you want high quality and done rite service we are your choiceI have never been reported to the Revdex.com and am appalled by this couples actions against my great reputation with this businessTheir stated problems with this event are 100% in the eyes of Brimont Catering Corpand we admit no wrong doingSincerely,? where I have been running my operation here for 11 years. This couples complaints regarding the event on September 27 2015 at the [redacted] Estate Bed and Breakfast I completely disagree with. The couple had issues with the price of the event from the beginning with nervous visits to Brimont Bistro to alter and change the menu to get within a budget. The final cost agreed was $30.00 per person including tax and tip. This is very reasonable for an offsite catering event with myself and 1 server on a Sunday afternoon. Menu is as follows: 1. Assorted cheeses crackers 2. Fruit trays 3. Seasonal greens salad with roasted onion balsamic 4. Penne vodka pasta 5. Rosemary roasted potatoes 6. Haricot vert beans with cherry tomatoes 7. Brocolli and cheddar quiches 8. Pork tenderloin with cranberry chutney 9. Rolls butter 1 Server 1 Chef Wash dishes and cut cake. As for lack of organization, this lack is truly on their part. I Gregory Cody have been running this business for 11 years in [redacted] NY. Everyone knows if you want high quality and done rite service we are your choice. I have never been reported to the Revdex.com and am appalled by this couples actions against my great reputation with this business.
