The following is our response to Complaint ID *** dated 11/22/2017.The process of dry aging beef is to either hang beef or place the beef on racks exposed in a near freezing temperature controlled refer Dry aging does not remove 100% of the moisture from the beef.The beef that we dry age
arrives to our *** processing plant wrapped in cryovac packaging We open the cryovac packing and place the beef on racks in our temperature controlled refer at an average of degrees The beef is exposed in the environment for an average of days.The temperature of our refers and freezers and the processing of meat products are inspected on a daily basis by a *** Inspector The *** Inspectors require us to cover the tops of all raw meat products that are stored in our refer which may cause some of the moisture to be retained on the top of the slab of prime rib.We have sold thousands of pounds of the dry aged prime ribs over many years at our business and this is the first complaint of this nature that we have received Our business is currently years old.Please feel free to contact me if you have any further questions.Glen M***ControllerAala Meat Market, Inc
