On 3-10-Mr [redacted] brought in steers to have processed for his customers , one of which was [redacted] The Steers hanging weight was and We at this processing plant operate on a day cutting cycle and is posted in our retail area explaining the process and moisture loss along with expected yieds from hoof to rail, then from rail to take home percentages based on USDA and our own yields from our choice beef I will attach a copy of the form that hangs at our desk to explain this process At the time of drop off [redacted] came in himself and was in our retail where we assist with the instructions We cut the beef on 3-after day aging and called the customers on 4-We release after three days freezing and they picked up on 4-4-the hanging weight was hot carcass we lose 30% average cut loss and 21% average moisture loss which yields 469# average take home for this size animal for our processMister [redacted] informed me that he did not want the day aging and requested a discount and asked for 50% off the processing which I gladly did for him to make it rightWe operate on a day cut cycle not a But I wanted to insure he was satisfied with his order Later that night his wife began slandering our business on our Facebook page and lying on our business and the transaction that occurredMr [redacted] then called and came back to see me to say he felt he was missing meat from his order and was wondering if maybe there was another tray of meat somewhere left behindI did check for his as he requested and did not find any and explained the moisture loss % to him He still felt like it was short and said he was just trying to feed his family so I let him place an order for any and all meat he felt he was missing and I would immediately cut it from one of my choice beef hanging in my cooler while he waitedHe made out a cut sheet which is attached and said he would be back in the morning to get itI cut it and he returned and picked it up and shook my hand and thanked meNow the [redacted] family has young children on my Facebook slandering my business and has resulted in me halting my custom processing and seeking legal advise for the lost and damaged business My records indicate that Mr [redacted] should have received pounds of take home meatMr [redacted] cut sheet had a pound tare weight showing and the owner of these beef came in and personally weighed all of the trays here to insure his customers received all their expected weight and was satisfied the other customers involved all came in and went through all their meat and checked everything before leavingall left satisfiedour records indicate Mr [redacted] left with pounds of meat his cut sheet said but the owner wieghed the other trays and noticed the tare was off on the trays so his take home was much higherIn addition to me giving him pounds of more choice beef cut to his order for free to make this rightEvery time I try to give to them to fix this they come back wanting more, and I have given it to them There is nothing more I can do for these people but seek legal assistance

Mr [redacted] cut sheet had a 10 pound tare weight showing and the owner of these beef came in and personally weighed all  of the trays here to insure his customers received all their expected weight and was satisfied . the other customers involved all came in and went through all their meat and checked everything before leaving. all left   satisfied. our records indicate Mr [redacted] left with 460 pounds of meat.  his cut sheet said 422 but the owner wieghed the other trays and noticed the tare was off on the trays so his take home was much higher. In addition to me giving him 86 pounds of more choice beef cut to his order for free to make this right. Every time I try to give to them to fix this they come back wanting more, and I have given it to them . There is nothing more I can do for these people but seek legal assistance.
