As the customer claims, they did in fact come in for 30 lbs of "honeycomb" menudo on said date. However, in regards to the customer's problem with the quickness of service provided, there is a simple explanation. We have a restaurant who orders roughly 40...

lbs of cut up "honeycomb" menudo every three days. On the date the customer came in, the butcher decided it more convenient for both him and the customer to give them the "honeycomb" that was already cut up and ready to go rather than detain the customer any longer than necessary. On claims that the process usually takes "45 minutes to an hour," the customer is mistaken. Because the product is cut while in a frozen state, the cutting process is 15 minutes at most. Furthermore, claims that the customer believes they received "the cheaper common tripe" are unfounded given that the regular tripe comes in 50 lb boxes. As a result, the butcher would have had to go out of his way to "defraud" the customer and bring out the 50 lb box of common tripe in order to cut the 30 lbs requested. As far as the customers claims that "immediately after the product was placed into boiling water [it] emitted an unbearable stench..." they had a different version of events when they first confronted the butcher and the cashier. According to the customer, the odor first appeared when they opened the bag of frozen "honeycomb" and as a result, proceeded to wash it, believing it would relieve the odor. Additionally, when the customer came in to confront the cashier and butcher, the date is listed as 6/20/14. The date of purchase is 6/18/14. The 48 hr window and the customer's handling of the menudo include too many variables such as additional products used to prepare the menudo, which could've caused the customer's claims of "spoiled" menudo. As far as the customer's threats to call the police and the health department, we felt it was in our benefit to be officially cleared by the Health Department. if we had chosen to refund the customer their money, we would have been admitting to false claims_ As the customer said, the Health Department was called and they provided a thorough inspection of our product and concluded that the frozen product had no odor and our freezers were working properly. The investigation was closed by the Health Department and as the owner, I apologize for their inconvenience but because their claims remain unfounded, so does their desired settlement.

In response to Mr. [redacted]' fabricated story...Mr. [redacted] obviously questioned all his employees and came up with this riduculous story. He states he does admit that the purchase was in fact made. He does admit that my instructions to the market attendant were not followed. In fact he states that the attendant felt that he should disregard my instructions which were to bring 3; 10 lb. boxes out from the freezer, cut them up into 1" pieces like they always do. I told him I am never in any hurry and that I WOULD WAIT!
Instead he chose to give me someone elses order and in fact that order was not honeycomb! 
The fact is I paid for honeycomb, and I was sold the regular cheaper tripe!
I told the cashier and the other attendant that the tripe stunk when we started cooking it! Not the other way around. They are lying!
I showed it to both the cashier and the market attendant and they both agreed with me at the time that there was not one bit of honeycomb tripe that she or he could point out to me, and it stunk very very bad!
The product they sold me was spoiled! The product was obvioulsy defrosted, not used in theyre operations; refrozen, re-cut and sold to me! 
Culebra Meat Market #12 sells menudo at they're store on the weekends!
The product they sold me was admittedly someone elses order, not what I  ordered!
The product was cut out of plastic bags, dumped into into clean bags right in front of me, so I don't know why [redacted] or his attendant is lying about a 50 lb. box in this statement. I don't have any idea or never saw the attendant bring out a 50 lb box. 
This is a fabrication.
Menudo when properly prepared and stored will last for way more than 2 days! 
This was not the case here in this instance. We lost out on lot's of money and I demand compensation!
