August 3, 2015Good day. My name is Annese G[redacted] and am the owner of Green's Catering Service. am writing today in response to the above mentioned claim. It is my hopes that at the conclusion of the correspondence you will see that we are a new but reputable company that stands on its value of...

quality food and customer service.My company catered a wedding for [redacted] on May 23, 2015 in Nokesville, VA. This catering request was submitted in September 2014 and numerous correspondences between me and the client were made to ensure efficiency of the reception for the wedding day. An itemized invoice detailing all that the client had asked for and what she was paying for was included. This invoice serves as a binding agreement for the service requested date confirmation, and actions of payment to confirm the agreement. This is a deposit payment and the remaining balance is due on or the day of the event. A copy of the paid invoice is included in this correspondence). At The beginning of May, [redacted] requested to add servers to serve the food to her invoice but to bill separately, did as requested (This invoice is included as well),.The day of the event came and my team was scheduled to arrive at the event per the request of [redacted] and her coordinator [redacted] at 4:15. Due to longer than expected prep time and a detour to the site, we were running late. called [redacted] the coordinator to let her know that we were running late and should be there by 5 (The wedding was at 5 and we were informed that the food would be served - between 5:30 and 6 pm (Full correspondence is.available in a pdf file that is about 45 pages, I will be more than happy to forward all correspondence via email if requested.) [redacted] instructions to me were to have my team wait by a gait because the wedding was to start 5 and they did not want us setting up during the ceremony. We were told that we could immediately pull up to begin setting up the buffet. We arrived to a home with tents and waited until we were told to come in. We began set up and food was ready. Guests began to come to the buffet and although the servers were there while they waited for the family to finish with pictures (this is happening while we were setting up and after we were finished the guest were still waiting). Instead of repeating to ask the guests to wait and watching them feed themselves we began feeding the guests their foods. [redacted] came through after almost all the guest were fed and told my team that we should have waited for her to say it was time. We were not aware that she was going to come back to tell us to start.My servers were contracted to serve the buffet and clean the serving area. [redacted] and [redacted] wanted them to also clean the tables as guest finished and clear off the dishes that they provided for the event and clean up at the trash. Although my servers were not contracted to do this we all compiled to assist.  ([redacted] claims we did not and I have a full team with the inclusion of the Chef that knows that we did). After services were rendered and our station was cleaned and we had gathered all of their dishes and placed them alongside a wall, [redacted] rudely ripped into me, said that everything was "[redacted]", and she was not pleased. We went over her concerns at that time and payment was rendered for the catering by [redacted]. The invoice for the servers was never paid, I received communication from [redacted]  a couple of weeks later of her feelings and that she felt she did not receive what she wanted. I informed her at that time that not only did she receive what she requested and paid for that she also received services she did not pay for and still had an invoice that was outstanding.  In good faith of her displeasure I have not further requested the payment for the servers and have paid my servers myself.Our services are requested on a weekly, and during this season, on a daily basis. Our reviews of our work and the business we receive daily speak for us and our client database of well over 70 and counting. We have embarked on our first year of business as of August 4, 2015 and look forward to many years or providing quality food and service and represent the pride of Southern Food and Hospitality. Maybe what she requested and what she asked for and agreed to wasn't enough to compensate what she truly wanted as an end result without paying for it; and dare I say the company that she was to expect to arrive with such a high reputation in our filed for such a short time. I really can't say what the problem was other than us arriving 20 minutes late to set up and I feel that the unpaid invoice without any acknowledgment and the additional services rendered without pay would fairly and overly justify [redacted]’s claims.We can be verified on via internet at the following sites. You can also see what we provide daily and for caterings and the response for the majority of satisfied customers. [redacted], please let me say that represent my company and my team when I say that our mission with everything we do whether it is daily service in the café or catering, our mission is to do what we need to do to make sure that our job is done and our customers needs are met and that they are satisfied. I did not get to speak with [redacted] the night of the wedding (although she and [redacted] stood across the room looking at me while awaited final payment and had me wait for about 15 minutes for [redacted] to return). I did realize that night that there would be nothing that could do to right a wrong that we could not bare. [redacted] said our services was "[redacted]"...untrue my servers and myself greeted each guests, fed each guests, asked if everything was ok to each guest no matter the age and assisted in every way that we could, [redacted] said that the food was not great (she never ate a bite, ever, after I personally offered a plate) yet each individual we fed had a different to say and most came more than once. [redacted] said that my staff was unprofessional. Assisting the guests throughout the event without any correspondence or acknowledgment but rudely at the beginning and at the very end, the guest of the wedding seemed quite satisfied with the matter we took care of them.
