This complaint is completely false. I have attached copies of the preliminary menu proposal, which had the vegan stuffed dumpling squash and salmon, then the revised 3/31 menu, (with chicken and pasta) agreed upon for this wedding, to reduce costs to fit their budget.We specifically made...

the vegan gluten free Tempeh meatballs at their request, to go with the gluten free pasta.  [redacted] was busy with school through 6 months of the exchanges until under 1 month before the wedding. I personally spoke with her on the phone regarding all of the dietary restrictions and specifications.  I have email documentation of all correspondence with [redacted], the other bride and [redacted]. If needed I can contact the 2 Parks Department staff who were working this event as witnesses. 
There was a dedicated bartender, and when she found one of the guests had gotten behind the bar before people were supposed to be back inside (while she was helping set up the seating tables for the room turn) the bartender got back behind the bar and told the woman that we were not open yet and we could get in trouble for her being back there. The guests were taken care of by the bartender and told why they had to wait a few more minutes - the ones that were waiting near the bar said they understood and it was totally fine.through 6 months of the exchanges until under 1 month before the wedding. I personally spoke with her on the phone regarding all of the dietary restrictions and specifications.  
There was a server (and a 2nd one for part of the time) tray passing appetizers to all of the guests, until a little before we were getting ready to open the buffet. I was there, filling the trays with the hors d'oeuvres as they came out of the oven and I personally went out in the reception room during the cocktail hour, to make sure the brides got hors d'oeuvres, but [redacted]’s mom told me they were having a private momenton the beach, so we didn't follow them out there. At every event where the tray passed appetizers are not being taken by guests anymore from the server, we typically set out a tray or two at the bar, which is what we did. We fulfilled our contract with this couple and I know that the guests were taken care of properly. I was there, filling the trays with the hors d'oeuvres as they came out of the oven and I personally went out in the reception room during the cocktail hour, to make sure the brides got hors d'oeuvres, but [redacted]’s mom told me they were having a private momenton the beach, so we didn't follow them out there. At every event where the tray passed appetizers are not being taken by guests anymore from the server, we typically set out a tray or two at the bar, which is what we did.

This is absolutely CRAZY! I corresponded with [redacted] (the other bride) for 7 months and between myself, her and [redacted] had 75 emails. We served the revised menu that [redacted] booked us for. I spoke to [redacted] several times on the phone and both of them more during the last month before the wedding. I discussed the gluten free items with [redacted] on the phone. The statements about our staff are just completely false. I have the documentation regarding the requested and revised mau and will contact the Parks Department to speak to the staff that was on-site during that entire event, who can attest to what I stated previously regarding on-site matters. The only reason we arrived later (3:00 PM) was because [redacted] told us we could not get in before then, when [redacted] and I had talked about my time-line having us arrive at 2:15. When I got there the Parks Department staff told me that we could have gotten into the building at 2:00 and there was no reason [redacted] should have told us 3:00.

Regarding  [redacted] 7/5/2014 Wedding – Complaint
 
I responded last year to [redacted] email and addressed her complaints, many of which were just not true. One person was 30 minutes late due to getting lost, 2 were 15 minutes early and one was 45 minutes late, I arrived 1 hour late due to having to finish the food and bring it in the van with me, however I sent 2 other lead staff early so we got caught up to the planned timeline very quickly, plus 2 servers and 2 of us from the kitchen stayed several hours later than scheduled or paid for.
Besides that part, the rest is not accurate. We had plenty of food for both appetizers and the dinner buffet, which was served on time, according to the MC of the events’ direction..
My staff was not rude to any guests (they NEVER are), just the opposite. Some of [redacted] women friends were being rude and mean to the servers, who graciously let it go and behaved in a completely professional manner.
 
Mr and Mrs [redacted] were hugging us, and they, their daughter (the bride) and groom, along with many of the guests complimented us on what a wonderful job we did the night of the wedding. I was a little stunned that she sent me such a scathing email several days later.
 
I did take full responsibility for our getting a late start, due to one of my kitchen staff being 2-1/2 hours late. I sent her a refund for the $269.76 kitchen gratuity, and she cashed the check soon after. I never heard another word from her until last week 8/30.
 
I run a very small business, and when people  postnegative, slanderous, untrue statements on wedding review websites, it damages our business, hurts me and my employees if we lose jobs because of it. We do an excellent job for our clients, and I believe I did that for the [redacted] family.
 
Please let me know what else I need to do.
