As the complaint only references bread products in general, we will not be able to focus our attention on specific varieties or formulations. Every product we produce gets a code printed on the package that helps us trace the date, time and even machine on which it was packaged. Also included is contact information so that the customer can reach us directly, allowing us to retrieve this information as well as the product in question. We can then best answer specific questions and provide the customer with replacement coupons if necessary. We have checked our retention samples on all products and are not seeing signs of early mold on these retain samples or on the quarterly shelf life studies that we perform. Many times it is difficult to determine the exact cause of mold as we are not in control of the handling or storage conditions of the product once it is delivered to the store or taken home by the customer. Our bakeries are certified to the BRC Standard of the Global Food Safety Initiative and have been so since 2009, having just received our 28th straight "A" in May 2016. This certification requires us to do these quarterly shelf life studies as well as keep retention samples from each production run through the shelf life of the product. We will continue to monitor retain samples and shelf life studies and make formula adjustments if needed.
