We received your letter today regarding complaint #[redacted] concerning the yield of meat received in a recent order.      Tyer’s Processing has been in business since 1976.   We are a small family run business and take great pride in having served hundreds of satisfied...

customers in the East Texas area.    To the best of our knowledge, this is the first Revdex.com complaint Tyer’s Processing has ever received.   This is a serious allegation that claims intentional deceit and fraud and it is extremely upsetting to us.   We can assure the Revdex.com and the customer, this was not the case.  We not only want to clear up the allegation, but would also like to use this opportunity to better educate future customers on expectations when placing similar type orders.   As backdrop, Tyer’s Processing provides meat processing services to local ranchers and farmers.   The customer brought in a small calf to be processed.    The calf weighed approximately 500lbs which is extremely small.    The average size is over twice that[i].    Processing orders typically include steaks, roasts and other cuts with bone that add to the “average” net weight.    The customer requested all hamburger meat which does not include bones, fat and other parts that are discarded when making 100% hamburger.   This results in an extremely low net yield when compared to averages from larger sized animals with typical cuts and non-discarded parts.         The customer expectations on our website and industry averages are based on yields that include steaks, roasts and other cuts with bone that add to the final weight[ii].   This means that 100% hamburger results in a yield well below average.   Thanks to the complaint to the Revdex.com that brought this to our attention, we are revising expectations on our website.  We will also provide all customers with a handout that details the expectations for all yields, so we are sure this does not occur again.   Since the customer in complaint #[redacted] was not aware of this and it resulted in missed expectations, we are prepared to refund his payment and offer a 20% discount on future orders placed at Tyer’s.    Also, Terry Tyer has personally called the customer back in an attempt to apologize and discuss this.    The customer has not taken his call to date.  We can assure him and the Revdex.com that Tyer’s Processing is committed to customer service and is extremely proud of a strong brand name and reputation that was built over the last 41 years.   Sincerely,   [redacted] Owner  [i] 1,040-1,400 Average   1,271  USDA WEEKLY WEIGHTED AVERAGE DIRECT SLAUGHTER CATTLETexas/Oklahoma/New Mexico; Kansas; Nebraska; Colorado; Iowa/Minnesota 8/21/2017   [ii] “Cutting yields can vary significantly depending on cutting specifications; cuts that are bone-in or boneless will produce very different cutting yields. If the animal is excessively fat, then the cutting yield will be lower because the fat is removed and discarded. A more muscular animal will have a higher cutting yield. Aging, leaving the carcass to hang for an extended period of time, will also impact cutting yields, as the carcass tends to shrink during the process.”      “Yields and Dressing Percentages” ”Cornell University Small Farms”
