[redacted] Executive ChefOverlook FarmMay 2016This letter is in response to the complaint filed by [redacted] and [redacted] in regards to their wedding that was hosted at Overlook Farm on May To begin with, the claimants stated that I made a claim in regards to their Beef Filet sizing Beef Filet is a cut of meat, also known as Filet Mignon; that is on average 1-inches thick and 2-inches in diameter Beef Filet is not known or purchased for its size, but rather for its texture and tenderness It would be impossible for me or anyone else at Overlook Farm to guarantee a steak's size as we are unable to naturally impact the growth or an animals muscles, thus resulting in a larger steak I can guarantee that the Beef Filet that was served at the testing and at the wedding was Overlook Farm Beef and is a fair representation of how animals may naturally vary in size.The claimants also stated that I had served them Chicken that was poor quality, and that I had mentioned numerous previous "complaints" regarding our Chicken The Chicken that was served is the same Chicken that Overlook Farm uses for its restaurant as well as [redacted] 's in StLouis I in no way mentioned that the Chicken we serve had received complaints, but rather that guests have commented on a texture difference between our natural, cage-free Chicken and that of factory-farmed Chicken Anyone who is familiar with cage-free poultry understands that there is a difference not only in flavor, but also in texture due to the Chickens being able to move around and work their muscles more regularly.I will conclude in saying that [redacted] and [redacted] have on more than one occasion been rude, unprofessional, yelled at, and accused Overlook Farm of lying In our dealings with this couple, Overlook Farm has remained professional and honored their repeated changes including up until the week before their wedding On their wedding day, the couple was an hour and a half late in getting their ceremony started which impacted food production and overall event scheduling.Respectfully, [redacted] Executive ChefOverlook Farm

Mignon; that is on average 1-2 inches thick and 2-3 inches in diameter. 
Beef Filet is not known or purchased for its size, but rather for its texture
and tenderness.  It would be impossible for me or anyone else at Overlook
Farm to guarantee a steak's size as we are unable to naturally impact the
