If there was food left over and your staff took lots of food back as you stated, this means that your staff did not do their job and bring out the food even after I asked them where is the rest of the foodI did later find out from one of my staff that they saw food in the kitchen left over and being packed up, this was after they had taken down the food from the buffetSo I do believe that you did provide the food, it was simply your staff never brought the food out, then sat in the kitchen eating the food we paid for as I did see this personallySo we were shorted the food we paid for and now is making since to meYou prepared the food, and your staff simply did not bring it out to us after we paid for itHowever again paying for people and not having near that many, there should have been lots of food left over.Either way you said that your staff packed up lots of food, But my wife and myself did not even get to eat accept for what we prepared on our taco bar on Saturday for lunch. Saturday evening you stated that you prepared bite size pieces, and I guess in the future we need to count on everyone only getting 1/bites of food. I hired Rio Brazos Cuisine from Waco to cater my client appreciation day at the Moon River RanchWe had informed them there were going to be about people the first day and people to serve the second day
They were to provide meals for Friday night dinner, Saturday lunch, and Saturday evening dinnerHere is how it went
Due to weather storms our attendance was reduced significantly,
Friday evening we only had in one area and in the otherTotal number were only people instead of the they were informed to feedThey provided meals for instead of meals for Then they provided meals to serve the When I spoke to the staff they immediately called the owner and 1/hours later they showed up with more foodBy then it was too late, most people had left the dining area and went away hungry

Dear Mr. [redacted], I sent one whole sandwich per person (they were cut into halves or thirds so guests could choose two or three). I sent over a cup of pasta salad per guest, one cup of garden salad, several loaves of French bread with dip, 36 bags of chips (guessing not everyone would have chips from past experience), and 2.5 pieces of dessert per person based on 42 guests confirmed. We immediately responded to your request for more food. I sent an additional 20 whole sandwiches to you as well as 20 additional bags of chips and two large bowls of pasta salad. We are 30 minutes away from your venue and we were able to get you additional food in one hour and 15 minutes. I called in extra staff to prepare this food. I left another event to make sure we took care of this for you as you seemed distressed. I did not bill you for this additional food.  Please see attached pictures of leftover food that was delivered and packed up for you to enjoy later or the next day. I will not refund you any money. I have over 25 years of restaurant and event planning experience. I have been in business for 10 years. Running out of food at an event has never been an issue. Your wife misrepresented the Saturday night cocktail party and clearly stated to me and my staff that this was not a meal. Your guests were asking for bigger plates from my staff, because they were making it a meal. If I had known that your guests were making this a meal, I would have had my staff portion out the food. As this has never been an issue with our company, I did not consider this option. We provided enough food for a cocktail party on Saturday night on small plates with the understanding that the guests would be provided something else to eat for dinner.I have discussed these events at length with my staff. You were sent amazing people who would never not put out food or eat your food. The only food they said they ate, was 2 broken empanadas that were left in the basket after the event. There were still chicken skewers and tostaditas left over, so the food did not completely run out on Saturday night.When the staff returned to the kitchen Saturday night, they said you were kind to them and that all was well. the additional food to you. I did not bill you for the additional food and time this required. We packed up the extra food and left it for you to enjoy. Since you were upset by the quantity of food on Friday night, I sent an extra staff person and extra food to your lunch on Saturday. I wanted you to be more than satisfied. We packed up lots of leftovers for you. You were not short on food. We were asked to give the leftovers to the band by your spouse. We received many compliments on the food and the guests were very happy. There was plenty of everything. The "dinner" Saturday night was ordered as a cocktail reception, not a dinner. We provided quality, handmade food for your guests to snack on before dinner. Again, I sent an extra staff person and extra food. There must have been a break down in the communication between your expectations and your spouse. If I had known this was to be a meal, I would have suggested heartier items or a dinner buffet.We also provided and delivered four pastry baskets.We have learned from your comments to ask more questions of our client's, so we have a better understanding of each event. My wife's statement
We make phone calls to all clients and guest in the first
couple of days after the event and we've had several saying they have never
went away hungry before. In fact it's the exact opposite, they are saying
they can't eat another bite

know I mentioned it was a client event and I just assumed you would know men and women I also didn't realize I
needed to say light or heavy for the finger foods I've never had to
specify that before, so I guess it was my fault
