The beef served was sour and guests got sick. Stayed past hours reserved which resulted in a lost of my deposit. I also hired Selections Entertainment to do my rehearsal dinner on August 31, 2013 and my wedding on September 1, 2013. The beef that was served was sour! Many of the guests complained about the taste of the beef. The following day, the morning of my wedding, half of the wedding party was sick including myself. Chills, upset stomach, diarrhea and vomiting. No one attended the bridesmaid brunch because everyone was sick, so that was money lost. When this was brought to the attention of [redacted] she denied it and tried to blame it on a cheesecake that someone had brought in although, most of the people who were sick had not eaten the cheesecake, but they had all eaten the beef. [redacted] only offered a 10% refund, which I felt was unacceptable. As for the food at the actual wedding, the pre-packaged salad was delicious. I cannot tell you about the rest of the food because I refused to eat it, but it was too late to change caterers. She also did not have a professional look at the wedding, however her staff did. Not to mention that we had our venue until midnight and I lost half of my deposit because [redacted] stayed until 1:15 am washing dishes even though they stopped serving food several hours before that. At the consultation she said she had worked with the venue before but then denied knowing that she was supposed to be out at midnight.Desired SettlementI would like a full refund of the rehearsal dinner cost, $277.25. I would also like to be refunded for the deposit that was lost due to [redacted] staying late $187.50. The total refund is $464.75.Business Response To Whom It May Concern:As owner of Selections Entertainment this statement is regarding [redacted] wedding rehearsal dinner and dinner for wedding on August 31, 2013 and September 1, 2013. Selections Entertainment is a professional business that has been in operation since 2009. We are a one stop shop catering to wedding planning, event planning, catering and rentals.On Sunday morning Sep 1, 2013 I received an email and phone call from Ms. [redacted] wedding planner stating that people in the wedding party got sick early that morning and they feel it came from the beef that was served from the wedding rehearsal. I proceeded to ask her questions such as did they eat anywhere else after the rehearsal and also reminded her there was also a cheese cake there that people ate that was not provided by Selections Entertainment. I also explained to her that myself and staff member also sampled the beef and neither of us got sick. The wedding planner also stated to me that they did go out for drinks and food after the wedding rehearsal. I explained to her that if they ate from another food company then it's also a possibility they could have gotten sick there also. During rehearsal dinner no one complained about beef being sour. Guests even came up for more food after their first serving including the wedding planner. I even received compliments on how great the food was. As a professional in the food industry, food poisoning or being sick from beef or other type of meats occur within minutes after the food is eaten. The wedding planner claimed everyone got sick the next morning. As for Ms. [redacted] losing her deposit I received an email from the venue and the main reason she lost her deposit was because of the condition the venue was left. I did go over a little time in the kitchen but the kitchen was left in a total clean condition and the coordinator at the venue viewed everything before I left. I also have in our contract that Selections Entertainment is not responsible for other vendor contracts and deposits. The wedding coordinator did a horrible job with coordination. Myself and staff had to help her with setup due to her being understaff and she also left at the end of the night before me. In the wedding industry and me being a wedding planner with years of experience, the wedding planner is always the last vendor to leave. They are suppose to make sure all task are completed. I was never informed by wedding planner before I left I had to be out at a certain time. She just came by the kitchen to let me know that she was leaving. The venue was a mess and she just left. I do not take responsibility of Ms. [redacted] loosing her deposit. She should get her deposit back from her wedding planner due to poor coordination and poor time management.Ms. [redacted] wedding coordinator contacted me a few days later stating her client wanted a refund for the wedding rehearsal and compensation for not receiving her deposit back from venue. I stated to her there was no concrete proof that I got her guests sick and I was not going to automatically admit to getting them sick by providing a refund and also explained to the wedding planning the poor work that was conducted on her behalf. I explained to her that it was an unfortunate situation that they got sick and that I would offer a 10% refund but was still not taking responsibility for the sickness. Ms. [redacted] did not accept the 10% offer and her wedding planner advised me that she would take legal action. That is the last communication I had on this matter which was September 2013, almost a year ago.Overall I have been in business for over 5 years and I take full pride in my business. I have never gotten clients sick. I cater with pride and my food is freshly prepared. I can submit many statements from clients about Selections Entertainment catering and customer service and I can also submit a statement from my employee stating she also ate the beef for the tasting and did not get sick. This is a situation that has came back up that has happened almost a year ago and I feel if she strongly felt I got her guest sick she would not wait almost a year to try and resolve the matter.Consumer Response The rehearsal dinner was the last and only place that all of the people who were sick had eaten together the day of August 31 or the previous days. People were sick that night and the following morning. That may not be everyone who was affected because according to the Food and Drug Administration food poisoning can set in anywhere from 1 hr after eating up to 10 days later depending on the type of organism that was ingested. Let me be clear that the chicken dish that was served was delicious, the complaints that I received were regarding the beef. There are companies that have been in business for many years who have cases of food poisoning.As for my deposit for the venue. I also received and still have an email from the venue stating that I lost $100 of my deposit due to clean up. We lost $187.50 of my deposit due to the caterer keeping "late hours", meaning after 12 am which was the designated time for everyone to be out of the venue. I can provide statements from many guests on their opinions on the food and the fact that they were sick as a result of eating the food served at the rehearsal dinner. We have waited this long due to unforeseen circumstances in our personal lives that have trumped this issue. However, I do believe we are still within the statute of limitations for the matter at hand.We do not feel that a 10% refund, approximately $27, is sufficient for serving food that has not been properly stored or cooked. If we cannot come to some sort of agreement on this case then we still do intend on taking legal action. Final Business Response I am sticking to my opinion and again myself and staff tasted the beef and neither of us got sick. The wedding planner told me people got sick that morning, Ms. [redacted] is saying that night. Her personal problems don't have anything to do with my business. It took her almost a year to bring this issue up. I honor and stick to my previous statement.

Service was poor, food was poorly presented and served. Food service began late. Overall very unprofessional company to work with. There was not enough food for our guests during cocktail hour. We paid for appetizers to feed 425 people and they did not provide a sufficient amount of food. The shrimp and grits that were served during cocktail hour were listed in our final count and messages as part of dinner, not cocktail hour.This change was not authorized by us.Dinner started late, although there was plenty of extra time given due to the ceremony starting late and wedding party pictures. There was one serving line for 400+ guests which hindered many of our guests from eating.We did not observe chicken breast on our guests plates.We asked for breast and minimal legs, it was the other way around. There weren't enough servers to accommodate such a large event. Several of our guests complained that the staff were rude.There was no ice in drinks and guests complained that drinks were served from [redacted] containers. We communicated all of our expectations to the company in advance. We did our part of meeting all deadlines and payments. We were reassured that they could handle an event of this size and we are greatly let down and disappointed. Once we addressed our concerns we were brushed off for days and only offered compensation for shrimp and grits. The company does not want to take any responsibility for the poor job they did on our wedding day. Desired SettlementWe would like for an individual from the company who is able to make executive decisions to contact us with a partial refund amount and an apology. Only refunding the shrimp and grits simply is not enough. Selections Entertainment made their final decision with compensation in this email and that is what we have finalized. The owner and manager reached this decision.Mr. & Mrs. [redacted], My name is [redacted] and i'm the manager for Selections Entertainment and I will be handling this issue. Please be aware that I was at your wedding and I worked the entire wedding so I will be able to answer all questions and concerns. * There was enough food for cocktail hour. Many of the guests knocked the cheese and crackers down and fruit which had to be thrown in the garbage. *We truly apologize for serving the shrimp and grits during cocktail hour.If we didn't it would take longer to serve and also we served the shrimp and grits due to your guests knocking down a big portion of the cocktail hour items. This was an executive decision we had to make in order to have proper flow for cocktail hour. Again we apologize that you did not get it for your dinner. We are willing to refund the amount for shrimp and grits. *Dinner was started late due to the lack of coordination. We were ready and on time for everything. Cocktail hour started on time. Your guests basically came in on their own with no direction. We also had to serve ahuge wedding party and we did not get the proper direction from your coordinator. She directed guests to the buffet line when we were not even finished serving the wedding party. It was very confusing and we worked to the best of our ability to have things under control. Many of the guestscame up and grabbed plates and we were trying to explain to coordinator that we had to serve the wedding party first, replenish the food and then serve the other guests. Being in this industry for years, the coordinator or dj is suppose to call tables by numbers or in a orderly fashion for proper control. *As for the buffet line, your floor plan was mapped out by you and [redacted]. You paid for a buffet line which we provided 7 servers and two bartenders.You did not pay for stations. If you wanted more than one station then the floor plan should have been discussed with [redacted]. Also speaking with [redacted], after you changed your headcount there was no more tables available. Even with two lines or another buffet station that would have consist of more servers which was not included in your catering package. *We had over 200 pieces of chicken breasts and legs of each, there was enough food for everyone. There was also food leftover and all your vendors got fed. During your observation i'm not sure why you didn't see chicken breasts on your guests plates but they were there and available and as guests came through the line we asked what part of the meat they wanted(breast or leg). *We had 7 servers including the owner [redacted] which made 8 people. We constantly replenished the food and always had someone at the beverage station.*I truly apologize for the staff being rude. We take pride in our customer service and again we truly apologize. [redacted] and I are taking the proper procedures to review this with each employee. * As for ice, catering packages come with a beverage station. Your beverages are guaranteed to be cold at all times. We always put ice in beverage dispensers. Your package does not include ice in individual beverage glasses. I'm not sure if your communication was missed on that with [redacted]. We also added an extra beverage for you with no charge.With your package you automatically get water and another beverage of your choice. You had water, tea, and fruit punch.Overall, your guest count went from 324 to 425 in a week time. You did your part with paying in the short period of time and we did our part with providing the proper service. We had to make extra accommodations to order extra items for your wedding to make sure they were shipped in time. We went beyond servicing your guests with little and unorganized coordination. [redacted] takes pride in her staff and we went above and beyond to accommodate your wedding. [redacted] is willing to compensate you for the shrimp and grits.Consumer Response Ms. [redacted], Thank you for your response to our inquiry. I want to make sure that we are all on the same page. My husband and I chose to go with Selections Entertainment because of how professional they were at the wedding show and how they presented themselves. This was the most special day of our lives, a once in a lifetime event in fact. The reality is that we were not pleased with the services, and what makes it worse is the comments and complaints that we've received from guests who attended. I contacted you in an effort to resolve the issue and see what your company is willing to do to make up for just a portion of the issues that were addressed in my last email. Reimbursing us for shrimp and grits only is simply not enough. Of all our friends, family and wedding guests in attendance not one of them has reported any sort of mishap with cocktail hour food being knocked into the trash, on the table or the floor. Even if this had occurred, I would assume that would be something that you all would have informed us of without us reaching out of you first. The wedding started late, and the wedding party took quite some time taking pictures. That was ample time for dinner to start on time. I communicated start times to your business in advance for cocktail hour as well as dinner. I communicated to your business that wedding guests would be walking in at different times and in various group sizes since this was an outdoor wedding. They didn't need very much direction to come into the venue and help themselves to cocktail hour refreshments. After grace, dinner was announced and it simply was not ready during that time. That has nothing to do with our coordinator or anything on our part. From where I was sitting I heard tables being called by the mistress of ceremonies on the microphone. I did not see 8 workers from Selections Entertainment, but I won't dispute that. I mentioned 2 serving lines and I will have to look back over the layout to confirm your statement. In reference to the chicken, a great majority of it appeared to be legs with only a minimal portion of chicken breast that had been split several times. We had guests report that they were served drinks out of Hawaiian Punch containers or Tea jugs. I just don't think that was professional for a wedding of this caliber. We gave our final confirmed count on the date requested. No matter how many guests we added to our count, we met the deadline and the money was taken for that number without hesitation. If there was an issue with limited direction from a coordinator or we requested a party size to be served that was out of your comfort zone we would have appreciated more communication on your part. Please contact us when you have assessed these issues and are prepared to resolve this situation. It is our hope to do so without involving outside parties. Kind Regards, [redacted].
