quality fish and seafood items that we can procure. We endeavor to serve delicious and fresh fish products at all times.  We go to great lengths to ensure our customers are satisfied with their food items and there overall dining experience. If there is an item that is not to a customer's liking our policy is to replace that item at the time of the meal. In the case of "take out" meals, our standard remains the same. We prepare the food items with the same attention to quality of product and presentation as those prepared and served in our establishment. we package each meal in high quality, appropriately sized individual containers to maintain its quality and integrity so the food might arrive at its intended destination in its best form and the food can be enjoyed where ever our customer chooses to enjoy it. Unfortunately, once the meal has left the restaurant we have no control over how long the food is in transit, how it is stored, the holding temperature of the food or whether it has been refrigerated, time and temperature being the two most important factors in maintaining the quality of product. Sashimi, in particular, is very delicate and very sensitive to holding temperature, not dissimilar to ice cream. At the point when we no longer have control of the product the customer has choices as to how they handle the product which can greatly effect the shelf life of the meal. Looking back on the date, there were no complaints of fish quality. At different times of the year we serve different types of tuna, depending on what is being harvested. During December we were serving Blue fin tuna, which tends to have a stronger flavor than , say, Big eye Tuna. By example, we sell several types of salmon: Scottish farm raised, King Salmon and pacific Sock eyed Salmon. All taste of Salmon but each has a slightly different different taste ranging from mild to strong. Many customers have a preference and order according to their preference. Similarly, many people have preferences in the tuna they order. preference is Big Eye Tuna with its more subtle taste. Others, prefer the bolder stronger taste of Blue Fin Tuna, which tastes significantly different than Big Eye Tuna. Perhaps this customer did not enjoy the taste of tuna she ordered. Though a rare occurrence, if there is a question of quality for fish consumed at the restaurant, we review the situation with great care, verifying the quality of fish immediately, We serve only the highest quality of fish and stand by this standard. When the concern is with fish quality that has left the building, we have the same standard, but cannot effectively determine the issue when the product is not returned. We value every customer and would appreciate the opportunity to more fully understand her concerns. Yet because our goal is to have a happy and satisfied customers, we invite [redacted] to meet with us in person to discuss her needs more specifically. This is an open invitation with no time limit. In the meantime we have refunded her credit card according to her wishes.
